Its going to go full retard I believe and you'll loose LOTS of power. Wouldnt recommend it, if you want to ditch VVT buy a set of non-VVT cams.
Yeah the spring in the vvt phaser will return it to its full retard, i tried it on my ecotec le5 a month ago by zeroing out the intake and exhaust vvt tables while mapping out vvt settings and power and it took it from a 7.3 second 0 to 60 all the way up to an 11.8 second 0 to 60
