The channel list on the left is displaying the exact sample values, while the gauges are interpolating for the sake of smoothness. The difference normally isn't too noticeable, but this log's sample rate was fairly low, so that makes it obvious.
I assume you're on the v3.1.4 firmware... If so, we have a v3.1.8 firmware update in testing that includes performance boosts for GM vehicles specifically. I hope to get that into the public beta in the near future, but we can get you access a little sooner if you submit a support request, include your MPVI2 serial number, and tell them that I asked you to do this so that we can put you on the MPVI2 Alpha firmware list, specifically to resolve a standalone data logging issue. If you link to this thread, that should help clear up any questions they have.

Thanks for the update. I can see that Log 0013 is definitely using the GM VPW speed boost that's in v3.1.8, as it's a consistent sample rate and is about 5x faster than before. 11 and 12 don't appear to have the new method active, so those may have been recorded before the firmware update was applied, but they were still somewhat faster than your previous log just on account of having less parameters selected.
Attached are new logs from this morning, all with the new updated firmware.
Notable changes to the car last night were: swapping all 8 fouled NGK TR6IX plugs gapped to 39
and installing new NGK TR55s gapped to 45,
also plugging in a vacuum line that was completely disconnected and bleeding the clutch.
Not sure how easily those changes can be spotted in the datalog. Drove the same way (normal)
I have too much fuel getting into the oil and it runs rich at idle...
