the 2 axis should be rpms/MAP kpa I would think. You want to log the same factors of the base fuel table which is MAP kpa(torr) and RPM.
Coming from the SCT platform, the coefficients are multipliers of the base fuel table pulsewidths.
JTEC does not use VE tables, the only thing you can do is log O2 correction and make changes to pulsewidth to get the fuel within 5%
It will never read out of range. Key on will read half not double so it will be within range. The map is still 0-5v sensor so it will read 2.5v or whatever the conditions dictate.

On the GM vehicles hptuners have a custom OS you can flash that changes some of the tables to incorporate 2 bar or more for boosted applications.
