COT is calculated, not measured like your egt.
You can add the Cat Temperature pid to your scanner, you'll be surprised how quickly it reaches 1700.
Did you make the log before you cleared out the COT adders in the tune?
Try clearing the change/history logs before you save.

assuming your setup is even generating 20psi, just change the Desired MAP tables from 210kpa to 240kpa.

the first one is limited to 230kpa, about 18.5 psi.
the 2nd tune is limited to 210 kpa, about 15.5 psi.

if you are logging Map SAE and Baro Sensor in your pid list you can create 1 or 2 custom Boost pids to log as well. See examples attached.

your logs show it going very lean between shifts, probably has something to do with the stumbling and backfiring.
Some sort of fueling issues there.
you should remove all of those Bank 2 pids from your pid table in the Scanner.
they will probably skew your results having them in there.

Leave the MAF plugged in, it also provides IAT.
If you would like to disable the MAF then go into Engine Diag, Airflow, and set the MAF Fail High to 0.
