I would imagine that you are past peak HP above 7200 and it is losing power. But that is normal, even on a 2018 intake.

I see similiar things at idle with the spark jumping around a bit so I just tried to load up the stock transport delays to see what would happen. It does change something but the overall pattern...

I think the Ford strategy uses the O2 sensors and some logic to estimate this so no sensor is needed. But I've never tried using it myself.
