Here's me learning. OK I don't have an IAT2, I can accept that. IAT2 is specific to LSA and LS9 vehicles. So that is not an issue on my log, like you previously stated. Could have been a nice conversation but you choose violence. :/
Which sensor is IAT1 that is referred to a high reference voltage on the DTC? Is it the 2nd temperature on my scan showing 81F? Why is it throwing a code? How do I check that voltage? I assume that is what you are trying to get me to do, but I can't understand by what you've written so far.

I logged some of the scanned voltages of the throttle position and pedal position when pedal was up or down.

The throttle/accelerator pedal codes are some of the hardest to troubleshoot. I just reviewed the service manual for the closest that I have (2010 Camaro). The wiring diagram is not quite the same but similar. It has 7 steps to check with very specific ways to measure voltage and resistance to diagnose the issue. I’m decent at the electrical stuff and I would have to carefully read and interpret what the manual says to troubleshoot this. And I don’t know how you can explain to someone who doesn’t know how to use a voltmeter how to go through the steps.
Look up the P2123 in Alldata.com for your particular model if you want to try and work through this yourself. My manual may not match the values that you need to troubleshoot this.
The ones that could probably shortcut this procedure are the one’s telling you that they can’t explain it to you at a level you can understand, at least in the amount of time they are willing/able to spend trying to spell it out for you.
How about you try me? I'm not that dumb! Despite captain tweedle dee and tweedle doo's worthless advice above, I have made a lot of progress.
I have narrowed it down to the 5 VOLT REFERENCE 2 according to schematics which involves TPS, APP and CKP. Using some of the scan voltages I have determined that APP Sensor 1 (which is on 5 Volt reference 2) does not change appropriately with the pedal. However, APP Sensor 1 does (.45 volt to 2.16 volt range - within the correct range according to the internet).
I found the wiring diagram for my car but 2006-2007 instead of 2008. If you have access t a 2008 I would appreciate it. Although I don't think there's much difference, everything seems to match the connector end views.
I don't have access to alldata. If anyone can search this info for a 2008 C6 Z06, I would appreciate it.
Don't worry about spelling it out for me if you don't feel like it's worth the trouble.
My next steps are to confirm the 5v reference 2 is not shorted to ground. I would greatly appreciate it if anyone would be able to teach me how to do this with a multimeter. I don't think it's too much of an ask. Either way, I shall persist.
I only have hard copy versions of service manuals for vehicles I own. You can pay for a short term subscription to Alldata to get what you need. Or the GM subscription service also has short term subscription available.
I’m not going to post my 2010 Camaro stuff since it might not be relevant for your car. You really can’t do this with”similar”.
I am still haunted by the other thread a while back by some other guy who was also unfamiliar with the basic fundamentals, where the GM diagnostic page was posted, and the page got interpreted as "but every step in the chart says 'replace ECM'!" when it clearly did not say that. So I'm not sure that providing more info here wouldn't just end up making things even worse.
Voltmeter basics.
One probe to one side of the circuit, the other probe to the other leg. If it reads negative (with a DC circuit) then the current flows the other direction. There has to be thousand of youtube videos showing how to use a voltmeter.
But the devil is in the details of reading the diagrams and interpreting what it all means.

I appreciate you trying to keep the discussion on track. Is there a way to delete all the posts from blindsquirrel and edcmat-l1? their replies are pretty worthless to the information on this thread and are just trolling.
The advice I have gotten from gtstorey and dangrebel is the only thing that has helped so far. I will post an update when I get a chance to start this evening.
I deleted a couple that weren't contributing but some of the others you didn't care for just didn't seem that bad to me? I will keep an eye on it and moderate if needed, I don't like to delete people's stuff unless they're really being a-holes for no reason. Some of the info you got (most, actually) was actually good info even if it wasn't conveyed in the nicest possible way
