Vehicle MPH vs Engine RPM Datalogging (Help)

I am new to HP tuners. I have a MPVI3. I want to data log 2 set points, MPH and Engine RPM. Then, use that data to create a line graph (RPM on Y axis and MPH on X axis). This is for a 2023 Polaris Indy Prostar S4 Snowmobile. Using this data I can effectively make changes to the clutching or fine tune the CVT system. Can anyone please tell me what or how I can achieve this? I have set up my configuration channels to collect engine RPM and vehicle speed already.
