Setting fan points

I've read the sticky about setting temps for the fans to turn on and off and am not sure if I totally understand it. The way i think it works is that the fan transition desired needs to be higher than the desired vs ECT for the fans to change state. And then the fan transition desired needs to be lower than the desired vs ECT to change state back down from say high to low or low to off. What I'm not sure about is for example, going from fans high to fans low. If I turn them on high at 206.6 (91) can I turn the high off at 203 (45) by setting my fan desired to 44?
