Full scanner support is a needed for sure for the fords.
The HP scanner is in my opinion the best on the market, I'd really like to be able to use it though.
Currently using the next best scanner (SCT) is the only option here.

the sampling rate cannot be increased, our scanner is receiving data as fast as the PCM will send it. We are planning a system that will allow more effective scanning by using a priority system, we have no timeframe for this development as yet.

I'm not all that concerned with the sampling rate, just with the actual scanner. Not being able to see knock retard is kind of scary.

Do the scanner put the Ford into 6x CAN bus mode? DashDAQ does this and I'm able to data log 30 items with ease (far more than I can with SCT's).

You can log a ton of items, they just log slowly. I wonder if this mode you speak of would increase the speed as well?
