Truck sputters at a certain mid throttle and wot then after a bit it drives just fine. Also does it sometimes after driving fine for a while and wont go away until sometimes turning the truck off then back on. Im lost

I am not an expert, especially in V8s, but I feel like this is going to be a mechanical problem. See how the injector duty cycle, MAF, timing, TPS, all of it wobbles around in the same way consistently?
