2 ways to get around it. Control your torque via airflow and DD or keep the minimum timing to a reasonable value at idle.
One takes time to precisely tune the motor and the other is a hack.

Would you be increasing or decreasing DD for a setup like this? Are there any good writeups I could read up on for these or is it all just trial and error?
Think about it this way to simplify things. The reason it's pulling timing at idle is because your idle is commanding a lot less torque then what your engine is seeing. You need to change the torque reading your engine is seeing by adjusting idle airflow. Decrease the idle airflow and the motor won't be trying to fight itself with timing to get commanded.
Half your airflow tables at idle and see where your timing ends up.
