I am installing a set of long tubes with catless mid pipes soon on a 2012 challenger r/t hemi 5.7l. I've only used HP tuners on GM cars. So what am I getting myself into?is it as simple as turning off the rear O2 sensors? I don't want the check engine light to be on all the time

Yeah its a straight forward process. If you have emissions to pass, make sure you just un-check the MIL enable box and keep the SES enabled so you pass the tests.

No emission test here so should be good to go.
You might also want to change the airflow delay some to compensate the 02's being further away.
