Why MAFless tune needed to do good MAF tune when VE table is not filled from factory?

I'm new to GM tuning so bear with me. I did search.

With a lot of E38 factory calibrations, the VE table is not populated.

People say to do the best MAF tune you should have a good accurate MAFless tune in there for when it uses MAFless mode under some situations (transient throttle etc). I assume this involves tuning the VE table.

How does this work from factory when a lot of E38s don't even have the VE table populated?

    Cheers

There is no regular VE table on a E38, it's all VVE under the EDIT tab.

They are all fully populated with data on a factory calibration. The only time nothing shows up is if you upgrade to a 2 bar speed density OS where the 3 new VE tables become blank.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.

If you don't post your tune and logs when you have questions you aren't helping yourself.

I am struggling to get my head around the VVE stuff to be honest. Is it also common practice to simply enable the 2.5bar Operating System mod which gives you normal VE tables, put the stock MAP sensor calibration values in and just tune it that way?
