hi could any one one tell me in step by step in which tables we will go and make changes to get good fuel economic and in which tables we can make changes to get more horsepower for all gmc cars

By your question, I would read more on the forum, stickies, and write-ups. There are multiple tables that affect spark, fuel, and airflow.

Also realize that you will have to find a balance in HP and MPG. You can pick up a small gain on both, but don't expect 500HP and 50MPG all at the same time.
