It's likely you are missing a specific channel in the main channels list for it to log the rest of the data.
Without knowing what graph and what you are working with, that is my guess. Post a log and try to add in whatever channel is missing.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.
If you don't post your tune and logs when you have questions you aren't helping yourself.
