    Beta version advantages?

Are there any advantages with using the latest Beta over the current stable version for my 2006 LS2 GTO?

Not to speak for them but it's not likely. Beta generally is for much much newer controllers that they are working on. I haven't seen anything new on a E40 computer is a long time.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.

If you don't post your tune and logs when you have questions you aren't helping yourself.

Me neither. I have opened older tunes with latest beta versions to check for new parameters or tables only to find that they are exactly the same as they were with 2.24 or 3.0.
Beta is for new platforms not supported in previous official versions.
