Overheat protection

Hello. New to this forum. I am currently running a 1999 5.3 fuel injected engine in my demo derby car. Stand alone harness . My question is when it reaches a certain threshold of temp it starts to .... chug... so to speak. I have been trying zero all tables looking at coolant temp but 2 races in a row it started to go into protection mode. I know I shouldn't want this to not happen but I do. I want to be able to melt it down if needed. Please do not tell me not to. No replies would be better then negative ones. Any suggestions would be helpful. During this events I have not experienced any knock to speak of. Just no throttle and power. I am running a cable throttle.i am to the point I may just find the proper resistor and install into the temp sending pigtail to trick it into thinking its 200 at all times... help

temperature based spark correction, zero it

temperature based and iat based fuel enrichment, zero it at high temps

then make sure cat enrichment is off

its likely getting so hot that it just floods the engine

So. I purchased a 220 ohm .25 watt resistor. Is this the proper wattage to trick my ecm? All the reading I did pointed towards the. 25 watt. Any help is appreciated

This resistance is equivalent to 199 degrees. I checked it on my daily nova with 6.0. I have been around these for a min. Just not melting them down. I had already zeroed those tables before I asked for help. 1 person offered and it's not the cure. This resistor will tell me if it's a component getting hot and shutting down or actual over heat protection. Like I said before. That's for the help but if you are not giving info then move on.
