Datalogging advice 2006 Mustang saleen blower

Anyone have suggestions on what channels to monitor for datalogging?

Long story short, Im new to tuning and my car was previously tuned by Triangle. Swapped the 5r55 to a 4R70 and now i need to go in and turn off the 5R switches in my tune. I cant pull my current tune and modify due to it being scrambled by SCT so im having to start from scratch.
So what im trying to do is get as much info out of my car by logging it before i start building my own tune.

    Any advice is appreciated!!

Ill set up a few histos and give it a shot this afternoon, appreciate the quick reply.

When I'm logging, probably best to do Idle and maybe hold RPM at a few different levels? Then maybe a 3rd gear pull locked up?

Also should I do this in closed loop or both open and closed loop?
