Once you are done VE tuning with your wideband, you have the option to go back to closed loop with fuel trims. There is no problem doing that.

Yeah, that isn't a problem at all.
You can run closed loop with or without the MAF sensor. The computer is still going to try to achieve stoich while in closed loop no matter what.
