I have an 04 Silverado not showing Air-Fuel Ratio Commanded on my scanner so I can't start correcting the VE table, this is the second time it has happen on another 03-06 Silverado ECMs, last time I just change ECM but would like to figure this out, hope someone can help, OS already changed to Speed Density 3 Bar.

If the channel is already there but nothing shows up, then remove the channel while connected to the vehicle. Re-poll for supported parameters under the edit tab and add the channel back in. Pick either commanded AFR or commanded EQ ratio. Either can be made to make corrections for fueling.
Make sure your software is up to date as well.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.
If you don't post your tune and logs when you have questions you aren't helping yourself.
