learning 5.7 hemi challenger

I'm new to hemis. I have little experience with chevy ls engines but hemis are new to me. I have this 2012 Challenger with 5.7 hemi with automatic transmission.

First thing to do was to disable that horrible DOD system so I just checked disable. After that I also disabled second o2 sensors and their DTCs. because I will change exhaust tomorrow and I wont have catalytic convertors anymore.

What else I can do? My engine is so far stock except exhaust. How can I make easy power? How about disabling catalyst protection? What about torque management? power enrichment?

Already checked few videos in youtube and did read few threads here.

No easy power to be had on a stock 5.7. To disable COT you can zero out the FA enrich max table.
