I have searched everywhere I can think of and can't get the engine to rev past 6600rpm. I even changed the EOT settings. Anyone have any idea what's holding me back?

Maybe the cold start table under fuel cutoff, if you didn’t adjust it.
Edit: Wasn't at a computer earlier, but more specifically, the Startup Modifiers.

It's not startup modifiers tables. Hot engine set to 8000 by default. Cold start, I've raised to 6900 from 176 degrees.

What is your oil temp saying in the logs?
Is it getting above 250 degrees and that is why it's cutting you off there?
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.
If you don't post your tune and logs when you have questions you aren't helping yourself.
I'm running a 180 degree thermostat and I haven't seen it get above 185.

WOW I'm shocked. I know I'm new at tuning but I can't believe nobody can tell me how to raise my rpm limit. lol

Did you try raising the EOT settings all the way up?
I don't see anything right off the bat that is telling it to stop you at 6,600rpm unless it's in the transmission side of the tune.
