Is there a simple way to adjust so that the downshifts happen sooner, with less pedal? I see OSS and also see an axis with pedal %, but feel like I tried the pedal % but didn't respond how I expected (could be mistaken though, getting old).

Raise downshift oss, just be sure nothing overlaps the upshift schedule, keep at least a couple hundred rpms between the upshift and downshift to allow room for hidden offset parameters.
