I currently have a different software/tool that I purchased a year ago that I plan to use to perform a virtual read of the ECU (2014 Audi - Simon 8.5). If I want to edit the file to make some changes, example, disable SAI, can I purchase the editor as a stand alone software to do this? Or do I need to purchase the entire package ?
Does the package contain maps as well?
The VCM suite you buy always comes with both.
There are no "maps" or tunes that come with HP Tuners, it's a do it yourself type thing. I'm sure you can buy tunes from people that make them though, if they do for the vehicle you have.

If you don't post your tune and logs when you have questions you aren't helping yourself.
HPT software only works with the HPT interface, it doesn't work with universal/generic/other J2534 devices or scan tools.
