2011 camaro ss 6.2 automatic

Basically stock no tune yet, cold air intake, still has cats and no mufflers , did this before I took off mufflers my car when stomped to the floor it hesitates lags until about 3500 rpm so it will not even do a burn out trac off break torque nothing, when your cruising and stomp it down pins you in the seat, what is this lag? Even sitting idle in park and mash it down it is not snappy

So today I unplugged my mass air flow sensor and car ran like 75% better, i was not getting any engine codes for it so could it be bad with no codes?
