Steering wheel from a steering angle datasource?

Is there a way to add a symbol of a steering wheel, that rotates depending on the input from a datafile.

Or if not, are there any other ways to add a steering wheel input and output to mimic my recorded steering inputs ?

Yes, you can add an E Image Display Object (there's already a Steering Wheel option in the defaults), and then choose the Field from your data file, and set the Output Type to Rotation. You might need to play around with the Input and Output mappings in order to make sure it's exactly straight, but hopefully it's pretty straightforward for you.
