Not sure exactly where it is. When you go to choose the tables in editor, like "engine", "transmission",etc, it's under one that say DTCs. You go in there and ca change whether the SES/MIL light comes on or not.

Cat Over temp is to keep from burning the thing up.
DTC is what you get when something has failed or is missing.
For you guys doing a late model drive train swap into an older smog exempt vehicle (or off road only), just remove all of the DTC tests and reported errors.
And yes, turn the COT enabled to off. If you don't have a CAT there is no point in trying to protect one
