Can anyone tell me why the throttle is closing at around 4500RPMs? I have messed with driver demand, peak tq and the virtual tq, but I cant keep the throttle open and I don't know what is causing it to close.

I am still learning this fun stuff. But I do see a shit load of knock man. That's insane. being that your running e85 i'm guessing it's false knock and the tune is far off. I would put the car back to stock and enable the flex fuel stuff and start over

Based on reviewing the log, the scan shows that engine toque is exceeding the max engine torque and the ECU is likely trying to limit torque when this occurs. The knock in the log is in direct correlation when the engine torque exceeds the max torque. Shortly thereafter the throttle closes as well in an attempt to limit.
The VTT may need additional increases around the cells which are impacted when engine torque exceeds the max engine torque.
