I have a 2004 3.4L v6. The MAP sensor is a stock sensor, which I believe is a 1 bar map correct? Is there any way to log boost? I've tried a couple times with no results.

No, 1 bar map sensors are not created to log anything above atmospheric pressure.
It doesn't have to be perfect, it just needs to be done in two weeks...

So I have to jump up to a standard GM 2 bar MAP, ok. Is there any programming to adapt a 2 bar to my set-up?

No, your application cannot support a 2 bar map as far as I know.
