I've been thinking about doing the same thing. I already have a buddy of mine researching the hardware required to build a custom car PC right for me. I have a '78 malibu that I eventually have a 10" touch screen main monitor where the HVAC controls and radio are, 7" monitor in dash above steering wheel for gauges, 7" headrest monitors for xbox and DVD, GPS and WiFi through Android, control Hvac, stero, and window/locks/trunk release.
In a region where is freezes 6 months out of the year, the LCD screen wouldn't be safe, right? I've wanted to do this type of thing for a while but was afraid of exposing it to the cold.
What PC are you using?
