Well, VE in theory is a model of how the engine "pumps" or "flows" air.

Steady state logging gives you, of course, a steady state results. It is true that when you suddenly open throttle, MAF reacts slowly and VE is static as such, so the dynamics or transients when throttle is suddenly opened are modeled as well and there are parameters for that and can be tuned. But for VE, just stick with steady state logging.
this is what i've done for years. it would just be too easy any other way...
