Installing long tube headers, removing catalytic converters

Hello, I am new to this, I am installing a set of long tube headers and removing the catalytic converters, the header set up has places for all the O2 sensors, but I am trying to figure out how to make adjustments to the post cat sensors so it will still run in closed loop, any suggestions would be greatly appreciated. The vehicle is a 06 GMC sierra with the 4.8L V8.

Just install all the sensors and disable all the rear o2 sensor codes along with the 2 cat efficiency code (P0420 and P0430).

It will still enter and exit closed loop with no problems. If you ever install a wideband you can remove one of the rear o2 sensor and zip tie it out of the way. On my 2006 Sierra with a 5.3 once you unplugged the rear o2 sensors a cat diag test would enable and there is no shut off in HP Tuners for some of these trucks.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.

If you don't post your tune and logs when you have questions you aren't helping yourself.

Awesome thanks for the info, I read through the book but it doesn't say anything about how to disable the sensors or adjust them to read correctly without the cats. I plan on installing two wide bands one for each bank to help with tuning so thanks for the heads up on not unplugging the sensors.
