It's under Engine > torque Mngt > general. Then on the right hand side, it says traction control system.
You can disable those settings but it will never disable everything because the TCS system is not controlled completely by the PCM. You would have to yank the ABS fuse to remove all ABS/TCS functions.
If you can't see those tables you are in basic view in the editor. Click edit > view > advanced to see all tables.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.
If you don't post your tune and logs when you have questions you aren't helping yourself.
