Should tables be smooth on stock tune?? 05 ford f250/ 5.4 3v

So just got into tuning, been wrenching for awhile. Read my truck for the first time man, somethings tellin me its been tuned before by someone else. I could be wrong but i feel as if the factory tune should be alot different after all my research. Any info is much appreciated.
