Just an update. A nice guy by the name of Jeremy sent me a file to try but unfortunately, it did the same thing.
My thoughts now are that there are tables that HPT cannot read/erase and those are being left on the ECU and when I hit that mark, it reads to those invisible tables. Shot in the dark at this point haha.
I have noticed it is when the tables shift from warming up to operating temperature. The highway is 4 minutes from my house and its about a mile or two after getting on that it does it. After that, even after loading the exact same tune, it doesn't happen.
If this switching is the case, I don't really want to lock the fuel tables in to only read from one set because the temperatures where I live very greatly, I did just modify and load a tune on that has the Torque to Fuel Quantity Correction DISABLED to see if it's overcorrecting itself.
Has anyone disabled this correction? What exactly does it stop itself from doing?
