'Knock Gremlin' Ia Having a Ball Annoying the S*** Out of Me

Preface: I am a fledgling tuner, with a relatively solid understanding of MAF and Speed Density tuning, and learning as much as I can about VTT tuning on the Gen V platform. I have a pretty solid MAF curve that's more or less consistent with my VVE, but I'm getting some concerning midrange knock and and can't seem to get my Idle Base Set Point, Rolling Idle or In-Gear/Park tables right, as my idle randomly starts hunting here and there after warmup. At this point, I can't tell if it is undereporting torque or I need to seriously retune my MAF, but I don't think it is spark advance related because I'm not seeing any retard in the negative range.

    Mods:
    GMPP Cold Air Intake
    95mm Throttle Body
    E80 Ethanol
    Flex Fuel Enabled
    Stock Heads/Cam
LT1 Injectors/ HPFP (I have an LT4 fuel system, sans in-tank pump, ready to install but wanted to get my MAF and VVE correct first before swapping)
Currently in Dynamic Airflow Mode (MAF + SD)

I know I'm at my injector limit with the current ethanol content, and I already have an LT4 system waiting to be installed. And while the random idle hunting is annoying, I'm definitely more concerned about the knock at 2500 rpms and I just don't know how to remedy this. Can someone please help?

EDIT: Well I think I figured out somewhat what the issue may be. I think the reason I am seeing knock at about 2,800 to 3,800 rpms is because I am getting a lean condition approximately in the same area. I also realize my Maximum Spark Retard is set low for some reason, but I think I was doing that to momentarily get my spark up from negative timing at idle until I got my MAF curve dialed in. At any rate, I now realize that tuning the MAF and VVE at the same time is actually the way to go instead of how I was originally approaching it (tune MAF first, then Speed Density and torque tuning and driver demand). And that the LT5 throttle body is much more of a headache than I anticitpated.

Nonetheless, I'm going to and adjust my air model tonight after about an hour or so of driving. Then I'll see if I can tame this throttle body without having to modify it. I am definitely going to back off of the ethanol, too (accidental overmixture).

so couple things i saw :

Maf vs trims is off , so is your VE . Also your FP is dropping to zero and bouncing back constantly , on that section where you have 7 degrees of knock i see zero FP on my PC.
