Need tuning help; surging issue. Thanks!!

Well, I chose to be stubborn and tune my car myself. I have tried to do my research to the best of my abilities. However, I've been scratching my head with an issue for a while now, and can't seem to get it resolved. So I was hoping to get some insight here in case I am overlooking something.
Issue: When going from idle to part throttle, there is a rough transition. The car surges for a little and will sometimes stall if it surges too long, or sometimes the surging will stop if I get the car cruising. I have tried adjusting the BRAF, the VE, and my spark tables and have had no luck. So I'm not sure if this can get resolved in another table or if I am missing something entirely.
Other than this, I believe the car is fine; my AFR gauge (not logging on HP) is in the range where I want it. 14.2-14.7 cruising. I do also have PE disabled currently to avoid any further issues, and I plan to turn it back on once I'm over this surging issue.
Starting to think I chose the most difficult way to tune the car lol

    Build:
    96 Camaro LS swapped
    Gen 3 p01 0411 ECU
5.3 with factory harness (deleted MAF)
    228/232 camshaft, 0.600" lift, 114LSA
    243 heads with 1 7/8 headers
    stock rotating assembly
    ls6 injectors (#12564162)
th400 (removed all transmission inputs on editor)
102mm throttle body, DBC, Jegs sheet metal intake
no knock sensors (I am aware this is not optimal)
    3 bar map
    91 octane

why are you running a 3bar?
why isnt your knock sensors hooked up?
    youre not logging LTITs
    youre lean in several places
    youre not logging speed
Id put back in the stock tune and start over, or if youre going to stay with no MAF change to the 1 bar OS

Still learning this tuning stuff so please bear with me.
    1. running 3 bar because I was planning on going turbo eventually. Not looking like that's going to be the case anymore. I'm assuming I can't just configure it to 1 bar and will need to replace it?
    2. I read that some camshaft upgrades can mess with knock sensor readings, so i have tried to keep spark conservative. I would like to eventually relocate to the bottom of the block. Just haven't gotten around to it
    3. I was logging LTFT for a while but wasn't noticing much change and ended up with more problems. So I switched to open loop to focus on the STFT, and so far, better luck.
4+5. VE isnt perfect right now. been discouraged with the surging so I haven't focused too much on the VE as I probably should. Can I log speed without a VSS?
    6. I do plan on forgoing the MAF sensor, so I'll switch that OS over, thanks.

idle and off idle is a direct result of BRAF and VE tuning.
You cant dial in idle until your nearly perfect on them.

Take a look at your throttle cracker. Maybe the tables are off a bit. My Tahoe was doing the same thing. I set my enable speed to 3mph and disable speed to 2mph.
