When dealing with these issue where the car is falling flat on it's face you need to log the channel "throttle torque source". This is a good indicator of what is failing in the tune, it will straight up tell you.
With the log/channels provided I cannot tell what your injector duty cycle is or your fuel pump duty cycle. I've attached my list of channels that I use when dyno tuning hellcats in our shop.
AntsHellcat.Channels.xml
Tables I would look at:
Max FW Tq
Max FW Tq 2
Both of these max out at 680 on your tune. Probably why it is falling on it's face. Bump these up, keep going till it stops falling on it's face then add 10%. Throttle is snapping closed or fuel is shutting off. I noticed you have these enabled in your torque management. In our tuning strategies we turn these off and use spark only. We don't disable it completely but we turn it off.
If you feel that this has helped, hit me up in DMs, I tune Mopars all day on my mainline prohub.
